鴨肉  Duck

The aromatic crispy duck, is probably the most iconic ‘Chinese’ dish in the UK but is relatively unknown in China, as it is a deep-fried version of the Peking Duck. Its huge popularity has earned itself a place as a genuine, authentic Chinese classic.  It is one of our most popular dishes on the menu.

 

Peking Duck, despite its name, did not actually originate from Peking or indeed from China! Its roots lay in Mongolia. However, the popularity of this dish in China in the last 200 years means it has become a Chinese Classic.  The skill required to roast a Peking duck is thought to be extremely technical – the duck is initially hung for days  to loosen the skin from the meat and roasted over flames to produce a duck with the crispest of skins. Years of training is required to master this skill.

It comes as no surprise that the Chinese are extremely selective about the fish they eat, considering the wide choice they have with a long coastline and one of the longest rivers in the world being present in China. Freshwater and sea water fishes are therefore equally enjoyed.

 

Steaming is perhaps the most popular style of cooking as it preserves the natural sweetness and the true flavours of the fish.

 

However, there are occasions where steaming is incompatible with the texture of some fish. There is therefore a popular alternative preparation of pan-frying and then pouring over a sauce of vegetables and seafood.

Red meats have always held the highest rank in the hierarchy of meats in Chinese cuisine. This can be traced back in history where only the feudal lords were give the prerogative to order the slaughtering of cows and lamb was available to the disposal of the Ministers of State, only. The exclusivity of beef can be attributed to the larger amounts of land required to graze cattle in comparison to pigs . Beef is most popular in the cooler climes of Northern China.

豬肉 Pork  

Pork is undoubtedly the most widely eaten meat in Chinese cuisine, with recipes using pork outnumbering those of any other meat. So commonly eaten is pork, that the Chinese word for meat and the word for pork is often used interchangeably. Here we have highlighted the most popular ways of pork in Cantonese cuisine; roasting it. The Char Siu pork is a honey roasted pork loin that is crispy and slightly char-grilled on the outside but juicy on the inside. It is eaten best in stir-fries, inside buns, or simply on its own with some soy sauce and some rice.  The thick yellow curry, with a creamy, satay consistency served here, is said to have descended from Singaporean and Malaysian cuisine, and then introduced to China by the Hong Kong Cantonese, with huge success.
