素菜 Vegetarian & Vegetable Dishes

Popular understanding of Chinese cuisine is that it is not very vegetarian-friendly. However, the truth is that the ancient Chinese monks managed in their wisdom to create a whole host of delicious dishes suitable for those who did not eat meat.

Most famously, they were able to create many ingredients using the soy bean into tofu and bean curd, that could be steamed, wok fried, deep fried and with just about any recipe or sauce. This provided not only vegetarians with a greater variety of dishes, but also meat eaters who were pleasantly converted to healthier eating by the fuller texture which could be achieved with tofu. The vegetables towards the bottom of this page are seasonal Chinese leaves, firm in texture but sweet in flavour, a must-have side dish for any Chinese meal.
